Eating “Lite” on the Same Meal as Your Family
A dear friend asked for suggestions to making healthy, weight conscience meals for herself while still pleasing a hungry husband and growing kids. Cooking two meals is out of the question.
My first suggestion is to make a list of all the meals your family eats and have each family member “rate” their liking of them. I usually give 4 choices:
- Love it,
- It’s fine,
- Really don’t look forward to it,
- Just can’t eat it.
They only get 2 (two) marks in that final column
Then take those results and serve the meals which suit you more frequently, those that your family will eat readily. Next, slowly start to change the recipes on the other meals. You can often get by with less fat than the recipe calls for, or substitute an egg white for one of the eggs. Sometimes if you serve the meal in separate parts, each person can combine to thier own liking on thier plate. Perhaps, remove your serving before the cheese goes on the top, that works too. Modify, don’t cook twice!
