Quick Easy Lite Recipe
Chicken Chili Stew
In a crock pot combine:
3 chicken breasts, thawed, cut in three pieces on the diagonal
1 can (28 oz.) diced tomatoes, with juice
1 can (15 oz) black beans, drained
1 packet taco seasoning mix
1 T. olive oil
Put crock pot on high til mixture simmers, then change to low.
When chicken is cooked through, add:
1/2 Cup rice
Simmer until rice is done, about 30-45 minutes.
Add grated cheese on top of each serving in bowl.
(Mine wasn’t cooking quickly enough in the crock pot, so when I added the rice, I transfered it all over to a dutch oven on the stove top to cook until rice is soft.)
